Tip of the week
If you’d like to get better at stalking deer, pick up a .22 rifle and go hunt some squirrels. Still hunting – i.e., sneaking slowly through the woods, looking for game – is a fun way to hunt squirrels and is great training, too. It’s especially effective if the ground is wet or damp. That allows you to move quietly. Look for squirrels on the ground or high in trees.
Recipe of the week
Autumn squirrel with apples
Ingredients
- 4 squirrels
- 1 tablespoon cinnamon
- 2 large Granny Smith apples
- 2 tablespoons corn starch
- 3 tablespoons water
- 4 cups apple cider
- 2-3 bay leaves
- 1 bag baby carrots
Directions
Roll the squirrel, cut into serving pieces, in flour. Place in a skillet of hot canola oil. Cook over medium heat until brown.
Meanwhile, peel, core and slice the apples.
Place the squirrels in a casserole dish. Layer on the apples and carrots, then add the bay leaves. Pour on the cider. Cover and cook at 350 degrees for two hours.
Finally, remove the squirrels, carrots and apples; place on a serving dish. Discard the bay leaves. Pour the sauce over the meat as is or, if thicker sauce is desired, first mix the corn starch with water, then blend that into the sauce.
