Think of where a woodlot meets a field or a flat mountaintop drops into a saddle. Deer, as often as not, will be in such places. Blueberry corn pancakes
Ingredients
- 1 16-ounce package corn muffin mix
- 1¼ cup milk
- 2 eggs
- 1 cup blueberries
Directions
Here’s a tasty breakfast fun to make when camping.
In a bowl, stir together the muffin mix, milk and eggs until just blended. Fold in the blueberries.
Pour the batter out – about a ¼ cup at a time – onto a lightly greased skillet. Cook about two to three minutes per side or until lightly browned, then serve with warm syrup.
